The Great Outdoors



Well hello all you millions of people who read this blog! Well maybe not that many…yet, anywho Amanda and I have declared that we are going to try and post on our blog daily if not purely for our own selfish need to talk about ourselves! So look forward to some exciting adventures from the PandA clan. 


We spent an awesome day at brighton once again thanks to amanda's stupendous christmas gift to me(4 day passes). The snow was great and I am pretty sure we could see all the way to Mordor from top of the lift!

We also went to the circus with some of our friends this week. It was way more heart pounding than I thought it would be…When the trapeze family was flipping thru the air I felt like michael phelps's mom watching him swim?


We went on a snowwalk-about this week! It was very refreshing to get outside and up above everything and just walk around. 


This is amanda and I's proudest creation of food thus far. We called it pizza but its more like pizza's awesome uncle that is a doctor/rocket scientist. 


Brussels sprouts/cauliflower pizza with parmesan crust

The crust
-1 cup cauliflower(put it into a food processor until it's roughly the size of rice)
-1 cup Parmesan cheese
-1 egg
Heat up cauliflower in microwave for 7 minutes, then mix in parm. and egg. Make a thin layer of the mixture on a pan, pressing with fingers. Bake at 400 for 15 or until crust if golden brown.
The toppings
-Brussels sprouts cut into quarters( about 15 sprouts)
-half a tomato diced
-half a yellow onion diced
-a random amount of broccoli and cauliflower 
-a handful of spinach
-1/2 cup of diced red and yellow bell pepper
-1 tsp chili powder (or to taste)
-1/2 tsp salt
-optional: clove of garlic and some pepper sauce
Heat up a tablespoon or so of olive oil on a skillet, then add all above ingredients and sauté for ten minutes or so ( I cooked until the Brussels sprouts were soft to eat.)

Bringing it all together
-Tomato/marinara sauce
-1/2 cup grated mozzarella cheese
Pull crust out of oven and let it set for about 10 minutes,
Spread some tomato/marinara sauce on top of the crust and than spread the pre cooked toppings. Top it all with some grated cheese (we used mozzarella) 
set oven to broil mode and place the whole thing back in for 4 minutes.
And thats it pull it out cut it up and enjoy! I just want you to know it was awesome and I am drooling on my keyboard just thinking about it.
